How to Cook the Perfect Wagyu Striploin Because this is a highly marbled MB 6/7 steak, it cooks much faster than regular beef. The rich intramuscular fat renders naturally, so there is no need to add oil or butter. 1. Thaw & Prepare Defrost completely in the refrigerator. Remove the steak from the fridge 20 minutes before cooking to bring it close to room temperature. 2. Season Simply Pat the steak completely dry with paper towels. Season generously with coarse salt and freshly cracked black pepper. 3. Hard Sear Heat a cast-iron skillet or heavy pan over high heat until smoking hot. Sear the first side for 2 minutes without moving the steak to develop a deep crust. 4. Flip & Baste Flip the steak and cook for another 1½ to 2 minutes for a perfect medium-rare. Spoon the rendered Wagyu fat over the steak continuously while it cooks. 5. Rest Transfer the steak to a warm plate and let it rest for 5 minutes before slicing. This allows the juices to redistribute for the best possible eating experience.
