The Txogitxu Lomo Bajo is Spain’s prized sirloin / striploin — cut from the lower back of mature Rubia Gallega cattle.

These cows, aged 8–12 years and raised free-range on the lush green pastures of Galicia, develop golden-yellow fat, dark red meat, and unmatched depth of flavor through natural dry-aging.

Txogitxu carefully selects each animal, dry-ages it in the Basque Country, and trims it by hand to remove the protective aging crust.

The result: a sirloin with an elegant balance of tenderness, richness, and signature Basque nuttiness.

How to Cook
Bring steak to room temperature (30 minutes).
Grill or sear over high heat 2–3 minutes each side.
