Top Cooking Tips The Reverse Roast (Best for a 1kg Ribeye Roll): Slow roasting is the ideal way to maximize tenderness and preserve the rich marbling throughout the roast. Cook in an oven or smoker at a low temperature (around 105°C to 120°C) until the internal temperature reaches 48°C to 50°C for medium-rare.
