Grain-fed Australian ribeye roast (boneless) from Coorong Black, marble score MB2 and grain-fed for 100 days. A boneless roasting joint from the rib section, prized for its marbling, tenderness and juicy, beefy flavour. Roast it whole or cut your own ribeye steaks. At this grade, expect light marbling.

Cooking suggestions:

• Roast: season well, sear all over, then roast at 160°C to 52–54°C inside for medium-rare
• Reverse sear: cook low at 110–120°C, then finish in a very hot pan or oven
• Rest 15–20 minutes before carving
• Or slice into 2–3cm steaks and pan-sear
