Featuring excellent marbling perfectly balanced for this naturally lean cut — delivering outstanding tenderness, rich clean beef flavour and ideal juiciness. The most prized and butter-soft steak from the short loin. Perfect for classic Filet Mignon, Chateaubriand or special occasions. How to cook (recommended): Season generously with sea salt & cracked black pepper. Sear in a hot cast-iron skillet with butter and garlic for 2–3 minutes per side to build a beautiful crust, then finish in a preheated 200°C oven until internal temperature reaches 52–55°C (medium-rare). Rest 8–10 minutes before slicing. Vacuum-packed for maximum freshness. Sold by the kilo — cut & weighed to order."
