What it is — and what it's famous for

Poultry (Duck, Chicken & Turkey) is famous for reliable family cooking — lean, versatile poultry that grills, roasts and pan-fries beautifully when cooked safely through and rested briefly so the meat stays juicy rather than dry.

Flavour & texture

Clean, mild and tender, taking on marinades, spice rubs and pan sauces readily. Even thickness, accurate temperature and a short rest are the difference between dry poultry and a juicy plate.

How to cook

• Best methods: grill, pan-sear, roast, or air-fry.
• Pat dry and season well. Pan-sear or grill pieces over medium-high heat, turning as needed, until cooked through; roast larger pieces at 180°C. Pound or butterfly thick breasts to an even thickness first.
• Temperature: Cook all poultry through to 74°C internal in the thickest part, with no pink raw meat. Check away from bone on bone-in pieces.
• Rest & thaw: Rest 5 minutes for pieces and 10-15 minutes for larger roasts. Thaw overnight in the fridge, keep raw poultry separate, and use promptly after thawing.

Serving & pairs with

Allow 200-300g raw per person depending on bone. Serve with rice, salads, roast vegetables, lemon and herbs, or slice over noodles, sandwiches and grain bowls.
