Puya is a slim relative of the guajillo with a fruity flavour and noticeably more heat.

What you're getting:

• Whole chiles

How to use:

• Toast briefly in a dry pan until fragrant (don't burn)
• Remove stems and seeds, then soak in hot water for 15–20 minutes
• Blend with garlic, onion and the soaking water for salsas and sauces
