What it is

Eastern Cove Colossal is the top grade of pasteurized crab meat, picked and packed in a 454g tin. It is the largest whole pieces, firm and sweet.

Colossal is the largest whole pieces of body meat. Jumbo lump is large whole pieces from the same body muscles. Lump is broken jumbo pieces mixed with smaller body meat.

How to use it

The meat is already cooked and pasteurized, so simply drain it, pick through gently for any stray shell, and use it cold or warm it briefly. Serve it so the pieces show: warmed in butter, on salads and seafood platters, as a crab cocktail, on pasta or in sushi rolls.

Storage

• Keep refrigerated at 0-3°C (33-36°F).
• Do not freeze: freezing softens the texture.
• Once opened, use within about 3-5 days (general guidance).
