What it is

Eastern Cove Lump is pasteurized crab meat, picked and packed in a 454g tin. The pieces are smaller and mixed, which makes it the best-value grade for recipes where the crab is blended in.

Colossal is the largest whole pieces of body meat. Jumbo lump is large whole pieces from the same body muscles. Lump is broken jumbo pieces mixed with smaller body meat.

How to use it

The meat is already cooked and pasteurized, so simply drain it, pick through gently for any stray shell, and use it cold or warm it briefly. It is ideal for crab cakes, dips, pasta sauces, fried rice, omelettes and stuffed vegetables.

Storage

• Keep refrigerated at 0-3°C (33-36°F).
• Do not freeze: freezing softens the texture.
• Once opened, use within about 3-5 days (general guidance).
