Flavour & texture

Savoury, juicy and properly beefy, with a firm, satisfying bite when the casing browns well. Cooked gently over medium heat the juices stay inside; rushed over fierce heat the casing can split, so patience pays.

How to cook

• Best methods: grill, pan-fry, or bake.
• Cook over medium heat, turning often for even browning — about 15-20 minutes in a pan or on the grill, or bake at 180°C until browned through. Avoid piercing the casing, which lets the juices escape.
• Temperature: Cook through to 71°C internal, with no pink centre. Judge by temperature, not colour alone.
• Rest & thaw: Rest 5 minutes before serving. Thaw overnight in the fridge before cooking and pat dry for better browning.

Serving & pairs with

Allow 150-200g per person. Serve in rolls with grilled onions and mustard, with mash and gravy, or sliced into pasta and rice trays.
