Flavour & texture

Smoky, salty and rich, crisping at the edges while staying meaty in the centre when cooked steadily. Rendering slowly gives better texture than blasting it, and the fat is worth saving for eggs or vegetables.

How to cook

• Best methods: pan-fry, oven on a rack, or grill carefully.
• Start in a cold or warm pan and cook over medium heat, turning once, 6-10 minutes depending on thickness, until crisp as you like it. In the oven, cook on a rack at 190°C for 12-18 minutes.
• Temperature: Cook until browned, crisped and piping hot throughout, with the fat rendered. Drain briefly on paper before serving.
• Rest & thaw: No rest needed beyond a minute to drain. Thaw overnight in the fridge, or separate slices briefly under cold water in sealed packaging if cooking from part-frozen.

Serving & pairs with

Serve with eggs and toast, crumbled over salads and baked potatoes, wrapped around other meats, or layered into BLTs and burgers. A little goes a long way.
