Flavour & texture

Savoury, juicy and well-seasoned, with a satisfying snap or browned skin when cooked over moderate heat. Gentle, even cooking keeps the casing from splitting and the centre moist rather than dry.

How to cook

• Best methods: grill, pan-fry, barbecue, or roast.
• Cook over medium heat, turning often, for 12-18 minutes depending on thickness, until deeply browned all over. Avoid pricking and avoid fierce heat at the start, which can split skins before the centre cooks.
• Temperature: Cook through to 71°C internal for pork, beef or lamb sausage, and 74°C for any poultry sausage. The centre should be piping hot with no pink raw meat.
• Rest & thaw: Rest 3-5 minutes before serving or slicing. Thaw overnight in the fridge and pat dry so the skins brown rather than steam.

Serving & pairs with

Serve in rolls with onions and mustard, with mash and gravy, sliced into pasta or rice, or as part of a cooked breakfast. Allow 150-250g per person as a main.
