Raised 100% grass-fed and free-range on fertile southern pastures, this lamb benefits from a temperate climate and a clean environment, resulting in exceptionally tender meat with a clean, mild flavor profile that avoids the heavy "gamey" taste of lower-tier lamb. The "Frenched" Advantage These racks arrive in a premium, restaurant-ready "Frenched" preparation. The chine and feather bones are carefully removed, the fat cap is peeled back, and the meat between the rib bones is scraped entirely clean. This means zero butchery work for you—it is ready to cook straight out of the package and delivers an immediate, high-end presentation on the plate. The Flavor: Because NZ grass-fed lamb is naturally milder and more tender than grain-finished options, it requires very little heavy seasoning to shine. How to Cook It: Two Ways Chef's Note: NZ grass-fed lamb is lean and tender. Do not overcook. Always use a meat thermometer. 1. The Classic High-Heat Roast Bring the racks to room temperature and pat them completely dry. Season generously with kosher salt and coarse black pepper. Heat a cast-iron skillet with a little oil and sear the racks hard on all sides (especially the fat side) to build a crust. Transfer to a 200°C (400°F) oven and roast until the internal temperature reaches 54–57°C (130–135°F) for a perfect medium-rare (usually 12–20 minutes). Rest for 10 minutes before slicing. 2. The Panko & Herb Crust (The Blue Sky Method) Sear the seasoned racks in a hot pan until browned all over. In a bowl, mix ½ cup panko breadcrumbs, 1 tbsp fresh rosemary, 1 tbsp mint, 1 tbsp parsley, 1 minced garlic clove, salt, and 3 tbsp olive oil. Brush the meaty side of the seared racks with Dijon mustard, then firmly press the herb-crumb mix onto the mustard. Roast at 175°C (350°F) for 20–25 minutes. Rest for 10 minutes before slicing into individual cutlets.
