What it is — and what it's famous for

Beef For Shabu Shabu Or Yakiniku is famous for Japanese hotpot and yakiniku — thin slices that cook in seconds, staying tender when swished briefly through hot broth or seared quickly on a screaming-hot grill plate.

Flavour & texture

Delicate, beefy and tender, with thin slicing giving a soft bite and a large surface for broth, tare and dipping sauces.

How to cook

  • Best methods: shabu-shabu hotpot or yakiniku grill.
  • For shabu, swish each slice through just-simmering broth for 10-30 seconds until it just changes colour. For yakiniku, sear on a very hot lightly oiled plate for 20-40 seconds per side, in a single layer.
  • Temperature: Cook until just cooked through and piping hot — thin slices reach temperature in seconds. Do not pile slices together or leave them simmering in the broth.
  • Rest & thaw: Serve immediately, no rest needed. Thaw overnight in the fridge or just until slices separate; keep chilled and cook straight from cold for the cleanest texture.

Serving & pairs with

Allow 150-250g per person for hotpot. Serve with ponzu, sesame sauce, tare, rice, noodles and hotpot vegetables, adding.
