Our Thomas Foods Signature selection comes from South Australian cattle, grain-fed for a minimum of 100 days to achieve consistent MB4+ marbling that delivers exceptional flavor and tenderness.

Untrimmed & Full of Flavor

This is the Untrimmed version of our Hanger Steak, supplied with the natural internal sinew and silver skin intact. Some trimming is required before cooking, but this allows you to prepare the cut exactly to your preference and provides the flexibility to use the trimmed portions for stocks, sauces, or other preparations.

Flavor & Texture

Bold Beefiness: Delivers a rich, intense beef flavor with a more mineral-forward profile than standard tenderloin.

Loose Grain: Its distinctive coarse grain is ideal for absorbing marinades and holding finishing salts.

Exceptional Tenderness: The MB4+ marbling and grain-feeding process help keep the meat juicy and succulent when cooked properly.

Cooking Advice

Preparation: Trim away the heavy internal sinew and silver skin before cooking. Pat the meat dry and season generously with sea salt and black pepper.

High-Heat Sear: Use a very hot cast-iron pan or grill. Hanger Steak is best served Medium-Rare, with an internal temperature of 52°C–54°C. Avoid cooking past medium, as the meat can become tougher.

Resting: Let the steak rest for 5–8 minutes after cooking to allow the juices to redistribute.

The Slice: Critical: Always slice against the grain to ensure the most tender texture.
