Cooking Advice

Preparation: Since it is already trimmed, simply pat the meat dry and season aggressively with sea salt and black pepper.

High-Heat Sear: Use a roaring hot cast-iron pan or grill. This cut is best served Medium-Rare (internal temp 52°C–54°C). Cooking it past medium will cause it to toughen.

Resting: Let the steak rest for 5–8 minutes after cooking to allow the juices to redistribute.

The Slice: Critical: Always slice against the grain to ensure a melt-in-your-mouth texture.
