The ribeye cap is the curved muscle that wraps around the top of the ribeye. It is the most tender and richest part of the ribeye, and the butcher peels it off whole. Choose the whole cap (about 1.5 kg) for chefs and roasting, or our pinwheel steaks: the cap rolled, tied and cut into thick round steaks. Season with sea salt and sear hard and fast.
