Heavily marbled and cut from the chuck underblade, this Denver steak pushes the cut into full Wagyu territory. What’s normally a balanced, slightly firm shoulder steak becomes something much softer and richer at MB8/9, with fat running densely through the muscle.

Pure Black Wagyu genetics combined with grain feeding create a very fine, even marbling pattern that melts quickly when heat hits it. The result is a tender, almost buttery texture, but with more depth and chew than a ribeye — Denver still keeps a bit of that shoulder identity.
