Standard chuck relies on braising liquid to stay moist. With this Wagyu, the intense fat renders and emulsifies directly into the sauce, creating a rich, glossy shredded beef perfect for premium tacos.

Ingredients:
1 kg Lake Preston Wagyu Chuck Roast (Cut into 3-inch chunks)
Dry Rub: 1 tbsp kosher salt, 1 tbsp coarse black pepper, 1 tsp cumin, 1 tsp Mexican oregano
Aromatics: 1 large white onion (quartered), 6 cloves garlic (smashed)
The Sauce: 3 dried Guajillo chilies & 2 dried Ancho chilies (stemmed, seeded, toasted, and softened in hot water), 500ml beef stock, 2 tbsp apple cider vinegar, 1 chipotle in adobo

The Method:
Blend the Base: Blend your softened dried chilies, beef stock, vinegar, and chipotle in adobo until perfectly smooth.
Sear the Beef: Season the chuck chunks heavily. Heat a dry Dutch oven over medium-high heat. Do not add oil—the MB 6/7 fat will render immediately. Sear for 2-3 minutes per side until a hard crust forms. Remove the beef and leave the rendered fat in the pot.
Build the Braise: Lower heat to medium. Sauté the onion and garlic in the Wagyu fat for 4 minutes. Pour in the blended chili sauce and scrape the bottom of the pot.
Low and Slow: Return the beef to the pot. The liquid should only come halfway up the meat. Cover tightly and bake at 135°C (275°F) for 3.5 to 4 hours.
Shred and Serve: Rest for 15 minutes. Skim any excess clear fat from the top (save it for searing tortillas), shred the beef with a fork, and toss it back into the reduced chili sauce.
