What it is — and what it's famous for

Pork Chops is famous for satisfying home cooking — pork that stays juicy with a well-browned surface, whether grilled as chops and steaks, roasted whole, or cooked slowly until it pulls apart tenderly. This is Chiang Mai pork chops in Bangkok at ฿420/kg, to cook at home.

Flavour & texture

Mild, savoury and juicy, with browned edges and a tender centre when cooked to temperature rather than by old well-done habits. Brining time or simple salt ahead helps, and a rest keeps slices moist.

How to cook

  • Best methods: grill, pan-sear and roast, or low-and-slow for large cuts.
  • Salt ahead where time allows. Sear chops and steaks over medium-high heat 4-6 minutes per side depending on thickness; roast whole pieces at 170-180°C, or cook large cuts low and slow until tender.
  • Temperature: Cook chops and roasts to 63°C internal, then rest for juicy pork. Minced pork and sausages go to 71°C; slow cuts cook until fork-tender at 90°C-plus.
  • Rest & thaw: Rest chops 5 minutes and roasts 15-20 minutes. Thaw overnight in the fridge, or up to 24-48 hours for large pieces, and pat dry before searing.

Serving & pairs with

Allow 250-300g raw per person, more on the bone. Serve with apple, mustard, roast vegetables, rice or salads, and slice against the grain where the cut allows.
